What to order

Fried sprats
The unofficial dish of the Bulgarian seaside: a paper cone of tiny crisp-fried fish, eaten whole, with lemon and cold beer. The messier the setting, the better they taste.
Black Sea mussels
Farmed along the rocky stretches of the bay — steamed in white wine, baked with cheese, or as a rich mussel rice. A pot with a sea view is a Burgas ritual.
Horse mackerel & turbot
Safrid is the everyday grilled fish, cheap and delicious; kalkan is the prized one. Both are best simply grilled with lemon.
Fish soup
A clear, lemony broth that fishermen swear cures everything — including the morning after a Eurovision party.
